Protein Energy Slice

This is especially good if you're tired, hungry and on the run.

 Ingredients

 1/3cup linseed
1cup sunflower seeds (or 1&2/3 cups of LSA mix)
1/3cup almonds 
(Alternatively, use 1 and 2/3 cups of LSA mix)

125g copha butter, melted
1cup dates, chopped and softened with a small amount of hot water
1/3cup carob powder
1cup shredded coconut
200g tofu
soy milk
1 Tbs brewers yeast
3 drops peppermint essential oil (not more as it is strong)

Method

  1. Blend tofu with softened dates. Add enough soy milk to make a smooth creamy mix. Add peppermint oil.

  2. Add linseed, almonds and sunflower seeds and blend (pre blended or as LSA mix).

  3. Mix all dry ingredients together. Stir in the tofu mix and melted copha.

  4. Press into slice tray and refrigerate until set.

Also delicious if you substitute chopped crystalised ginger for the peppermint, and chocolate chips for the carob! (Ed)
